A beautifully classic white Burgundy wine: in fact, this is the style of wine that got me interested in wine in the first place. If you chill the bottle in your refrigerator, you’ll want to take it out 15-30 minutes before drinking so the wine can show off its various aromas and flavors, from lightly citric and floral to a hint of nuttiness on the palate, with streaks of lemony chalkiness running through to the lengthy finish. A touch of oak completes the very good structure, acidity and balance. Surprisingly reasonable price, too.
A lot of people recommend a pairing of poultry and pork but I prefer a delicate fish like flounder, swiftly sautéed in a little butter and/or light olive oil, with capers and a few slices of lemon added to the pan.
