I approached this sparkling wine with a bit of skepticism – but it was completely unfounded.
First, I was leery of the name “Faire La Fête” which means “to party.” Second, I have never heard of this producer, and there’s essentially no information online. Third, this wine comes from the south of France, not from Champagne.
However, I discovered that the grapes for this wine are sustainably grown (see below). And Faire La Fête is made in the “traditional method” – which means it was made the same method as champagne. In addition, the wine is produced according to the strict regulations of AOC [Controlled Appellation] Crémant de Limoux in Languedoc-Roussillon, specifically in Limoux where sparkling wines were documented even before Champagne.
This wine is rich yet light on the palate, with a persistent mousse of very small bubbles. Aromas ranging from appealing rich yeast and flint to honeyed florals. Honey flows onto the palate with a little stone fruit too, which continues into its medium finish.
