2011 Saladini Pilastri Falerio Ascolani DOC

This white wine made with organic grapes you’ve probably never heard of is a great find at a great price.  Beginning with a combination of green apple blossoms and herbs, it’s at first reminiscent of a fruity Sauvignon Blanc.  But on the palate it has more mild, rounded flavors, as well as moderate acidity with a flash of chalk and clean dirt.  The wine opens nicely as it warms in the glass. Finish includes herbs, some sweetness and again a slight apple-y quality. Pairing this wine with fresh tomatoes works, and it takes the aromatics down a notch.  Pairing it with a light fish course is also a good idea. Recommended (88). BSE
